About This Cut
The T-Bone Steak offers two distinct tastes in one cut: a tender filet on one side and a flavorful strip steak on the other, separated by a characteristic T-shaped bone. It's similar to a Porterhouse, but the filet portion on a T-Bone is typically smaller.



A popular cooking method for the T-Bone Steak is to grill or broil over direct heat to achieve a beautiful sear on both sides, then finish over indirect heat to cook evenly. Because the two sides cook at different rates, it’s best to position the filet further from the heat. Rest before slicing, and aim for medium-rare (130–135°F) for optimal tenderness on both sides.

The More You Know:
The T-Bone is cut from the short loin primal, which lies between the rib and sirloin. This section produces some of the most tender and sought-after cuts. The “T” shaped lumbar vertebra in the center separates the two muscles that make up the strip steak and the filet mignon.
