About This Cut
Sirloin Steak is a reliable, versatile favorite that delivers big beef flavor without the premium price. It’s leaner than ribeye but still tender and juicy when cooked properly. Sirloin Steaks are typically boneless, moderately thick (often 1–1.5 inches), and lean with light marbling. They have a firm texture and can range from oval to rectangular in shape. The top sirloin is more tender than the bottom sirloin, making it the preferred choice for grilling.



Popular cooking methods for the Sirloin Steak are to grill or pan-sear to medium-rare (130–135°F) or medium (135–145°F) to retain juiciness. Let the steak rest for 5-10 minutes before slicing. A marinade can help enhance the natural tenderness and flavor, especially if cooking beyond medium. Great for direct heat grilling or broiling.
