About This Cut
Our Porterhouse Steak is a grand cut, offering the best of two worlds on one plate: a generous portion of tender filet on one side and a flavorful strip steak on the other. It's distinguished from a T-Bone by its notably larger tenderloin section and usually less prominent center dividing bone, making it an excellent choice for a hearty meal or for sharing.

A popular cooking method for the Porterhouse is grilling over high heat to medium-rare to preserve the tenderness of the filet side while getting a nice sear on the strip side. Because of its size and dual textures, it’s ideal to reverse-sear, grill, or broil, then rest before slicing to keep juices locked in. It’s often large enough to serve two people, making it a great centerpiece for a special meal.

The More You Know:
The Porterhouse comes from the short loin, located along the backbone behind the ribs. The Porterhouse is one of the largest and most premium steaks available, prized for its combination of two high-end cuts in one: the tenderloin filet on one side of the bone and the strip steak (New York Strip) on the other. The signature T-shaped bone in the center gives it its classic look and helps conduct heat evenly during cooking. Porterhouses are thicker than T-bones (typically 1.25” or more) and deliver the best of both worlds—rich marbling and delicate tenderness.
