KC Strip Steak, also known as the Kansas City Strip, is a steak lover’s classic. It offers a balanced combination of rich flavor, satisfying chew, and moderate marbling, perfect for those who enjoy a hearty, steakhouse-style experience. It’s a popular go-to for grilling, pan-searing, or broiling..



A popular cooking method for the KC Strip is to grill, pan-sear, or broil over high heat to develop a rich crust while keeping the inside juicy. Let it rest before slicing. Aim for medium-rare to medium (130–145°F) to maximize tenderness and flavor. Because of its bold taste, KC Strip pairs well with compound butters or steak sauces, but doesn’t need much more than salt and pepper.

The More You Know:
The KC Strip is cut from the short loin primal. This area is just behind the ribs and in front of the sirloin, where the muscles are tender from minimal use but still develop great flavor. This is the same area that gives us the T-bone and Porterhouse (where the KC Strip appears opposite the filet).
