About This Cut
The Filet mignon is prized for its exceptional tenderness and refined texture. Cut from the most tender part of the animal, it delivers a melt-in-your-mouth experience that makes it a go-to choice. It’s lean, elegant, and incredibly consistent. Our beef is dry-aged for 21 days, a process that naturally intensifies its flavor and tenderness.
Filet mignon is often best when seared in a hot skillet or on a grill, then finished in the oven or over indirect heat. Because it’s lean, it’s often wrapped in bacon or served with a rich sauce to add flavor. Cook to medium-rare or medium (130–140°F) for the most tender result.

The More You Know:
Filet mignon is cut from the tenderloin, which is a long, cylindrical muscle that runs along the spine in the loin primal. Because this muscle does very little work, it remains tender throughout the animal’s life. It’s one of the smallest, most limited cuts on the animal, making it rare and sought-after.
